Our own brand, Cocorex is the process of blending palm kernel oil, extracted by supercritical carbon dioxide, and palm oil leads to new cocoa butter replacers (CBR), offering our customers an economical alternative with first-rate physical and chemical characteristics. Cocorex is ideal for enrobing, solid and filled confectionery. One of the major advantages of using CBR’s is the easy switch from the production of Cocorex chocolate to the production of cocoa butter chocolate, as each type of individual product will withstand a certain degree of contamination by the other. This effect is also useful in filled products where the filling contains cocoa butter or nut oil – the coating can accept some fat migration before the deterioration in gloss occurs.. |
